Other Words Used to Describe the Flavor and/or Odors of Wine: Candy (sweet and creamy), Casky (woody, not a good description, casky is used when it seems as if the wine was aged in wooden barrels for too long of a period), Buttery, Barnyard (believe it or not, this is not a negative description and it refers to an odor, not a flavor, some of the most desired wines have this rustic smell when uncorked), Corky (not good at all, this describes the odor of the wine more than the taste), flowery, cooked (hot or burnt flavor, not a good thing), foxy (smells and tastes like concord grape juice), raisiny, spoiled orange juice (not good), shoe polish/paste (this smell indicates the presence of a fungus called brettanomyces “bret”), salty, grassy, nutty, oaky (can be seen in wines that are fermented in smaller, newer wood barrels), kraut (as in sauerkraut), earthy, sweet, woody, yeasty.
